Chinese Tea Ceremonies The description of the Chinese Tea Ceremonies starts with boiling and brewing tea in the glassy tea -pots.
Only needle-shaped tea is brewed in the glasses, these are green, yellow or white sorts of tea, made of tea leaf buds.
Tea leaves of these tea sorts are needles alike and the main feature of brewing them in the glassy tea-pots is that these tea-leaves - needles behave unexpectedly in the hot water. They stand straight vertically and start moving up and down. And if to add to this composition a candle and fix it so that it could hold the constant temperature of the water, the tea leaves will be moving for long and quite intriguing.
As you can see Chinese prefer not to boil tea. Though it will not harm so much, it does not blend with tea traditions with the only exclusion - over - fermented tea Pu Erh.
Right before brewing Pu Erh is to be rinsed to clear from the dust.
After the water starts boiling you should twirl it so that an eddy appeared and immediately throw Pu Erh in this eddy.
If everything was right done, the water in the tea-pot bursts. After this burst tea is to be boiled for a bit and used. Boiled Pu Erh is much silkier than brewed one
Another way to make Chinese tea is not so ceremonial. Brewing tea in the Gai Bei is quite a common thing in the daily life of Chinese. Gai Bei is a lidded cup, sometimes with the saucer, in such cups tea is brewed with boiling water. After it tea is used directly from this Gai Bei, assisting yourself with the lid and filtering thus tea leaves.
The forth method of Chinese tea-drinking implies usage of classic ( porcelain or of clay) tea-pot, Chahai - Chinese tea basin, small tea bowls and a tray, on which all manipulations with tea service will be done.
Sometimes set of tea service includes also a reservoir, in which cups will be floating. Tea is brewed in the tea pot ( not steeped! ) and from there tea is poured into the Chahai and from there into the tea bowls, from the latter tea is drunk. The process is repeated many times and by the 6th portion the taste will be the richest and the concentration of oils and vitamins will be the highest.
